Polenske|pəˈlɛnskə| [Name of E. Polenske (fl. 1904), German public health chemist.] Polenske number or Polenske value: a number expressing the proportion of volatile, water-insoluble fatty acids in a fat (see quot. 1973).
1906Analyst XXXI. 259 When a low Reichert-Wollny figure was associated with fluid insoluble volatile acids, and especially when the Polenske number exceeded 2, the proof of the presence of cocoanut oil [in the butter] was fairly definite. Ibid. 260 He knew nothing about the Polenske value under these conditions. 1928[see Kirschner]. 1936Analyst LXVI. 407 (heading) Polenske (or insoluble volatile acid) value. 1973D. Pearson Lab. Techniques Food Anal. vi. 153 The proportion of butter fat present is frequently assessed from the Reichert and Polenske values... The Reichert value is the volume of 0·1 n alkali in millilitres required to neutralise the water⁓soluble volatile fatty acids distilled from 5 g of fat under specified conditions. From the same distillation, the Polenske value is the volume of 0·1 n alkali in millilitres required to neutralise the water-insoluble volatile fatty acids. |
