A slice of a root, cut up during processes of manufacture; spec. a piece of sugar beet prepared for the extraction of juice, or of chicory prepared for drying and roasting.
1858Simmonds Dict. Trade, Cossets, a name on the Continent for slices of beet-root, from which spirit has been distilled. 1902U.S. Dept. Agric. Rep. No. 74. 39 (Cent. D. Suppl.), The raw beet is simply cut into long slender grooved slices. In the factory these slices are known as cossettes. |
