A person in charge of a cellar; (formerly) = cellarer n.; (now usually) a person in charge of a wine or beer cellar. Also: a cellarer.In the 18th and early 19th cent. applied esp. to the keeper of the Cellar-tavern in Newgate Prison, a prisoner permitted to sell candles and basic provisions and to take a percentage on the liquors consumed.
