Etymology: < Chantilly, the name of a town (and commune and castle) in the French department of Oise, near Paris.With use in sense 1 compare French porcelaine de Chantilly (1756 or earlier). With use as noun compare French Chantilly, denoting a kind of whipped cream (1807, originally and frequently in à la Chantilly, designating dishes made with whipped cream) and a kind of lace (1872). The culinary use derives from the name of the Castle of Chantilly. The uses to denote porcelain and a kind of lace derive from the name of the commune of Chantilly, famous from the 18th cent. for its lacemaking; the porcelain manufacture at Chantilly was established in the mid 18th cent.
