1849 Athenænum 17 Feb. 172/2 M. Boland, a baker of Paris, has invented an ingenious instrument, called by him the Aleurometer—the purpose of which is to indicate the panifiable properties of wheat flour.

1889 Jrnl. Chem. Soc. 56 184 The greater the percentage of gluten, the higher will the dough made from the flour rise in the aleurometer.

1913 Allen's Commerc. Org. Anal. 8 100 It was formerly customary to determine the amount of expansion of gluten under standard conditions in an..aleurometer, but the results are of little value and the instrument has fallen into disuse.
