Etymology: < Spanish amontillado (1836 or earlier) < a- , prefix ( < classical Latin ad- ad- prefix) + the name of Montilla (see Montilla n.) + -ado -ate suffix². Compare earlier Montilla n.

Formerly: †a wine of the sherry type produced in Montilla (see Montilla n.) (obsolete). Now: a type of sherry, generally dry or medium dry in flavour, which has undergone a period of biological ageing (under a layer of flor: see flor n.) followed by a period of oxidative ageing (through exposure of the liquid surface to the air), or a sherry which has been blended to resemble this. Also more fully amontillado sherry.
