Origin: A borrowing from Yiddish. Etymon: Yiddish gefilte fish.
Etymology: < Yiddish gefilte fish, literally ‘stuffed fish’ < gefilte , plural of gefilt ( < Middle High German gevüllet filled, stuffed (German gefüllt ), use as adjective of past participle of vüllen fill v.) + fish , (unchanged) plural of fish ( < Middle High German visch fish n.1).Specific forms. The α. forms show remodelling of the first element after German gefüllte, plural of gefüllt. Semantic motivation of the name of the dish. The most typical form of this dish in modern use resembles fish balls in jelly. Its name reflects a former method of preparation: the fish flesh was cut from the skin, chopped very finely, and spices were added, and then the fish flesh was stuffed back into the skin of the fish.
