Etymology: Apparently < hag n.1 + fish n.1With sense 2 compare earlier hag n.1 8, and see discussion of the likely semantic motivation at that entry. It is unclear whether sense 1 shows a similar motivation, or indeed whether it has any historical connection with sense 2 (or with hag n.1 8); it could perhaps instead be < hag v.1, being taken to resemble a cutting implement (compare razor shell n., although in that instance the name arises primarily from resemblance in appearance).
