Origin: From a proper name. Etymon: proper name Idaho.
Etymology: < Idaho, the name of a state in the northwestern United States, where the potato is grown.The name Idaho was apparently first considered in c1860 for what became the Colorado Territory in 1861 (now the state of Colorado); it was subsequently applied to Idaho County (now part of the state of Idaho) in 1863. The origin of the name is uncertain, perhaps < Kiowa-Apache ídaahȩ́́ Comanche (earlier spelt idahi), although the semantic development assumed by this suggestion involves various undocumented steps. Much later, G. M. Willing claimed to have invented the word (reported in 1875 in a letter by W. O. Stoddard to the New York Tribune 11 Dec. 4/3); however, there is some evidence that it may have been in use in Colorado before Willing came to the West in 1859.

In full Idaho potato. Any of various varieties of potato grown in Idaho; spec. the Russet Burbank, a large, brown-skinned potato often used for baking.
