Etymology: < inul- (in inulin n. at inula n. Derivatives) + -ase suffix.
Biochemistry.
An enzyme which hydrolyses inulin to fructose, found esp. in some fungi.

1893 J. R. Green in Ann. Bot. 7 90 This transformation has been found to be due to a special enzyme, to which the name inulase may be given. It is a different body from diastase, for it has no action upon starch~paste.
1899 J. R. Green Soluble Ferments 77 The transformation of inulin into sugar is brought about by the action of an enzyme to which the name inulase has been given. The existence of this enzyme was first demonstrated by the writer in 1887, when the germination of the tuber of the artichoke was made a subject of examination.
1931 E. C. Miller Plant Physiol. xi. 628 Inulase may occur with diastase but has no action whatsoever upon starch.
