Origin: A borrowing from Spanish. Etymon: Spanish mondongo.
Etymology: < Spanish mondongo guts, tripe, blood sausage (1599), further etymology uncertain; perhaps an alteration of bondongo (1601), itself perhaps of Arabic origin. Compare mundungus n., menudo n.
A kind of stew, usually made with offal (frequently tripe), popular esp. in Spanish-speaking Caribbean countries. Also in extended use.
