1839 A. Ure Dict. Arts iv. 382 Mutage is a process used in the south of France to arrest the progress of fermentation in the must of the grape.
1988 N.Y. Times (Nexis) 18 Dec. v. 6/1 The winemaker arrests the fermentation while some residual sugar remains in the must. The yeasts are killed by the mutage, by adding a certain amount of pure alcohol.
1994 Oxf. Compan. Wine 653/2 Mutage transforms fermenting must into a vin muté such as a vin de liqueur or a vin doux naturel.
