Origin: A borrowing from French. Etymon: French orgeat.
Etymology: < Middle French, French orgeat syrup made from barley (c1370 in Chauliac), refreshing drink made from this syrup (1732), probably < an unattested Old Occitan word (compare Occitan orjat , ordiat ) < Old Occitan orge barley (a1259 as ordi , Occitan òrdi ; < classical Latin hordeum barley: see hordeate n.) + -at ( < classical Latin -ātum -at suffix); compare Catalan ordiat (1324). Compare earlier hordeate n.Compare also Italian orzata barley water (1311), syrup made from barley (1618; < orzo barley (see orzo n.) + -ata -ate suffix1). The 18th-cent. form orzat is probably after Italian orzata. N.E.D. (1903) also gives the non-naturalized pronunciation (‖orʒā) ‖/ɔrʒa/; compare quot. 1843 at sense 2. 19th-cent. American dictionaries including Webster (1854) record the pronunciation /ˈɔrˌʒɑt/; by the end of 19th-cent. and early 20th-cent. the less naturalized variant /ˈɔrʒɑ/ is also recorded in U.S. sources.
