Origin: A borrowing from Turkish. Etymons: Ottoman Turkish baṣdurma, baṣdirma.
Etymology: < Ottoman Turkish baṣdurma, baṣdirma (see pastrami n.).
A type of highly seasoned, air-dried, cured beef originating in the Middle East. Also more generally: other kinds of meat prepared in a similar manner.
