A colourless oily ketone having an odour of peppermint, made by heating pinacol; 3,3-dimethyl-2-butanone, CH3COC(CH3)2. Also: any other ketone in which the carbonyl group is bonded to at least one tertiary carbon atom. Also called pinacoline.

For this reason, pinacolone is used instead of pinacoline.
