Etymology: < Yiddish bialy (20th cent.), shortened < Bialystoker kukhen , literally ’Białystok cake’ < Bialystoker of, relating to, or originating from Białystok ( < the name of Białystok , a city in north-eastern Poland, where this kind of bread roll was first made + Yiddish -er -er suffix¹) + kukhen ( < Middle High German kuoche cake n.). Compare slightly earlier Bialystok roll n. at Bialystok n. 1.

U.S. (originally New York City).

A chewy bread roll having a circular indentation filled with finely chopped onion. Cf. Bialystok n.Bialys were brought to the United States by Jewish bakers emigrating from the Polish city of Białystok; they are similar to bagels but have a circular indention instead of a hole in the centre and are not boiled before baking.
