Origin: A borrowing from German. Etymon: German Rollmops.
Etymology: < German Rollmops (19th cent.; plural Rollmöpse ; < rollen roll v.2 + Mops mops n.2, with reference to their squat, stocky appearance); the β. forms reflect reanalysis of rollmops as a plural form.With forms without final -s in attributive use (see e.g. quot. 1964) compare e.g. trousers n. (see Compounds 2c, Compounds 1d at that entry) and rickets n. (see Compounds 1, Compounds 2 at that entry), although the evidence suggests that reanalysis of German Rollmops as a plural form occurred early (compare e.g. quot. 1901).
Chiefly in plural. A fillet of pickled herring, typically wrapped around a pickled piece of gherkin, cucumber, or onion.
