The modern marzipan-topped form of the cake, typically decorated with eleven balls (generally understood as representing the apostles excepting Judas), also appears to date from the early 20th century; prior to that a typical simnel cake was enclosed in a raised pastry crust coloured with saffron, sometimes with a crenellated edge to the lid.
