单词 soy
释义

soyn.1

Brit. /sɔɪ/, U.S. /sɔɪ/
Forms: 1600s souy, 1600s– soy.
Origin: A borrowing from Japanese. Etymon: Japanese soi.
Etymology: Ultimately < Japanese soi, regional (Kagoshima) variant of shōyu soy sauce (1597; < Middle Chinese; compare Chinese jiàng thick sauce made from soy beans, yóu oil, and jiàngyóu soy sauce); transmission of the monosyllabic form via Malay has been suggested, but the word has not been traced in that language. In sense 2 perhaps as a shortening of soybean n. (see note). Compare Dutch soja (a1669) and the other European words cited at soya n. Compare slightly earlier soya n.Japanese shōyu refers only to the sauce (compare sense 1; the soybean is called daizu , literally ‘large bean’). In English soy n.1 and soya n. are first attested in the sense of the Japanese word (see sense 1), and only come to denote the soybean (plant and fruit) later (see sense 2), soybean n. being earlier in that sense (although soya n. 2 predates soya bean n., but not soybean n.). This suggests a development from soy denoting the sauce, via soybean , denoting its main ingredient, to a shortened soy , denoting the soybean, probably reinforced by scientific Latin soja in former botanical names of the plant Glycine max (see soya n.). This pattern is matched in some other European languages, especially those in which the word appears early.
1. A sauce made from fermented soybeans, typically having a thin liquid consistency, a brown colour, and a salty or umami taste, used as a condiment or flavouring esp. in East and South-East Asian cuisine; = soy sauce n. at Compounds 3.Soy sauce is traditionally made from fermented soybeans, roasted grain (such as wheat or barley), and salt. Varieties include light (with a light brown or reddish-brown colour and a very thin consistency) and dark (with a darker colour and slightly thicker consistency); see also tamari n.
