Any of a group of proteolytic enzymes originally isolated from the soil-borne bacterium Bacillus subtilis and used in detergents, processed foods, etc., and in research.Subtilisins are produced by numerous species of Bacillus; those used commercially include B. licheniformis and B. amyloliquefaciens.
