Origin: Probably from a proper name, combined with an English element. Etymons: proper name Brunswick , stew n.2
Etymology: Probably < the name of Brunswick County, Virginia, where the dish has its likely origin (see below) + stew n.2The origin of the stew is attributed to the slave cook Jimmy Matthews, who in 1828 cooked a pot of squirrel stew thickened with onions and stale bread, and served it to a party of local politicians who were out hunting. Besides Brunswick County, two towns called Brunswick also lay claim to the origin of the dish, one in Georgia, the other in North Carolina. A stew traditionally of squirrel and onion, now frequently of small game or chicken and containing other vegetables, typical of the south-eastern United States.
