aleurone layer a layer of cells just below the TESTA of seeds such as barley. Aleurone releases large quantities of hydrolytic enzymes (AMYLASES, PROTEASES and NUCLEASES) for digestion of the ENDOSPERM. Thus food material is made available in soluble form for embryo growth.
