Nasharabi

Nasharabi

 

(also narsharab), a thick, dark-red liquid obtained from the juice of the pomegranate. It contains 10 percent citric acid and 50 percent sugar. In order to make nasharabi, the seeds are removed from the rind and inner flesh segments of the pomegranate. The juice is squeezed from the fruits and then steamed in a vacuum device until it reaches one-fifth of its original volume; sugar and spices (coriander, basil, cinnamon, and bay leaf) are added. Nasharabi is used as a condiment for fatty meat and fish dishes.
