Lund, Daryl B.

(1941– ) food scientist; born in San Bernadino, Calif. He received his Ph.D. and began teaching at the University of Wisconsin: Madison, his alma mater, in 1968. In 1984 he chaired the food science department and then removed to Rutgers University (1988) where he again chaired the food science department for two years. In 1991 he was named Executive Dean of Agriculture and Natural Resources and Dean of Cook College (part of Rutgers State University of N.J.) He wrote many scientific papers on food engineering including thermal and aseptic processing of food.
