Oxygenases

 

enzymes of the oxidoreductase class that catalyze reactions in which a substrate is oxidized by the inclusion of two oxygen atoms. Widely distributed in plants, lipoxygenase is an oxygenase that oxidizes unsaturated fatty acids and their esters to yield the corresponding peroxides and hydroperoxides; the rancidification of flour and groats is based on this process.
