Roberts, Lydia Jane

(1879–1965) home economist, educator; born in Hope, Mich. She entered the University of Chicago at age 36, earning a Ph.D. and becoming professor of home economics there (1919–44). Author of the classic Nutrition Work with Children (1927), she specialized in children's and community nutrition and nutrition education; she developed standards for dietary requirements and lobbied for vitamin enrichment of flour and bread.
