Peppery Lactarius

 

(Lactarius resimus), a cap mushroom. The cap is 5–20 cm in diameter; the central portion is concave; it is slightly mucoid, has a ragged edge, and is whitish in color with concentric zones that are not sharply defined. The stem is short, thick, and hollow. The flesh is pungent. It grows predominantly in birch forests. It is a very valuable edible mushroom and is used in food only in a marinade.
