Sabza
Sabza
raisins made from white seedless grape varieties (such as the white oval kishmish), a type of kishmish.
Sabza is obtained by two methods—by first boiling the berries for three or four seconds in a weak (0.3–0.4 percent) alkaline limewater solution and subsequently rinsing and drying them in the sun, or after the initial boiling, by fumigating them with sulfur dioxide gas and drying them in the shade. The quality of sabza dried in the shade is superior to that dried in the sun.
