The carbohydrate portion consists of one to three monosaccharides (glucose, galactose, and rhamnose). Solanines occur in plants of the genus Solarium of the family Solanaceae; especially high concentrations are present in the shoot tips and flowers of the potato. The compounds have a bitter taste and, together with other alkaloids, apparently deter animals from eating the plants. REFERENCEKretovich, V. L. Osnovy biokhimii rastenii, 5th ed.
