Salad Plant

any one of various annual vegetable plants whose leaves are used in salads and as garnishes for meat and fish. Salad plants include lettuce, chicory, petsai, leaf mustard, and mint. They contain many vitamins, mineral salts, and organic matter. The plants are cold resistant and yield abundant harvests in early spring.
