Vacuum BottleVacuum Bottle(or Thermos bottle), a vessel with double walls that keeps food products at a given temperature without the application of heat. A distinction is made between vacuum bottles for household and for restaurant use. A household vacuum bottle is a glass Dewar flask enclosed in a metal or plastic case. It may have a narrow or wide neck, and it closes with a cork and lid. The capacity of such bottles is 0.25–2 liters (I). In public catering, vacuum bottles with a capacity of up to 30 l, called vacuum containers, are used for the storage and distribution of food products; three to six boxes with food are loaded into such containers. Vacuum cannisters with a capacity of up to 10 l are used in the retail trade of such products as ice cream and hot piroshki. Such equipment is usually made of aluminum, and the space between the double walls is filled with heat-insulation materials, such as crushed cork, corrugated paper, or aluminum foil.
