Pimpinella

a genus of plants of the family Umbelliferae. The plants are perennial (more rarely, biennial or annual) grasses with pinnate leaves. The blossoms are compound umbels. The fruit is ovate-orbicular and often slightly compressed from the sides. There are about 150 species in the tropical, subtropical, and temperate regions of Europe, Asia, and Africa, and only a few species in America. In the USSR there are more than 25 species, including many in the Caucasus. A widely distributed species is burnet saxifrage (Pimpinella saxifraga), whose leaves are used in salads and whose fruits are used as a spice. Burnet saxifrage and some other species are resistant to drought and cold and are used as fodder plants.
