ScorzoneraScorzoneraa genus of plants of the family Compositae. They are perennial and, less frequently, biennial herbs and sub-shrubs. The leaves, which are alternate and entire, are pinnatipartite or pinnatisect. There are approximately 170 species, distributed primarily in the arid regions from central Europe and the Mediterranean to East Asia. More than 80 species are found in the USSR, mainly in Middle Asia and the Caucasus. The thickened underground parts of some wild species are edible (for example, Scorzonera tuberosa). Black salsify (S. hispánica), which is cultivated predominantly in Europe and America as a vegetable (known as sweet or black root), is a good nectar-yielding plant.
