Xanthoproteic Reaction
a qualitative color reaction (appearance of yellow coloration) characteristic of protein solutions upon boiling with concentrated nitric acid. The yellow coloration turns orange after the addition of concentrated alkali. The xanthoproteic reaction indicates the presence of aromatic amino acids (phenylalanine, tyrosine, tryptophan) and is due to the formation of the nitrogen derivatives of the amino acids.
