zein[′zē·ən] (materials) A combustible, white to yellowish protein powder derived from corn; insoluble in water, soluble in dilute alcohol; used in inks, fibers, microencapsulation, and coatings for paper and food. Zein a protein of plant origin, in the prolamines group; it is present in maize grains (Zea mays). Its molecular weight is about 40,000. In shape zein crystals resemble needles or short threads. Zein is poorly soluble in water; it is soluble in 60–80 percent ethanol. It occupies a position between globular and fibrous proteins. Zein is made up of 18 of the 20 known amino acids, glycine and lysine being absent. On hydrolysis zein yields a considerable amount of glutamic acid (26.9 percent), leucine (21.1 percent), and proline (10.53 percent). The food value of zein is low because it does not contain the essential amino acid lysine. zeinenUK
