Blunt, Katharine

(1876–1954) nutritionist, educator; born in Philadelphia. A University of Chicago Ph.D., she developed a home economics curriculum while on the faculty there (1913–29) and conducted important research on the role of ultraviolet light and vitamin D in nutrition. As president of Connecticut College for Women (1929–43), she strengthened the college academically and extended the curriculum to politics, economics, and business.
