Fetid Russula
(Russula foetens), a cap mushroom of the genus Russula. The cap is 7-15 cm in diameter and is almost globular on the young mushrooms, later becoming flat and sticky, ocherous in color, with a striated margin. The stem is stout and whitish. The taste of a fresh fetid russula is acrid, and the smell is unpleasant. They grow in the summer and fall, most often in birch and oak forests. They are eaten only pickled, after preparatory soaking and boiling.
