(Rumanian, brinză), a cheese made from sheep’s milk. To make brynza, the milk is curdled with a rennet leaven, and then the cheese mass is prepared. Brynza is cured in brine. The composition of ripe (one to two months) brynza is 30-45 percent fat (in dry material), 54-57 percent liquid, 6-8 percent salt.
