The type of fermentation occurring in yeast, in which glucose is broken down to produce ethanol and carbon dioxide (earlier called vinous fermentation); contrasted with lactic fermentation.

Late 18th century; earliest use found in Robert Heron (1764–1807), journalist and author. Perhaps after French fermentation alcoolique.
