2. Cookery. A ‘made dish’, served between the fish and the joint. Also attrib., as entrée dish. (Littré explains entrées as ‘mets qui se servent au commencement du repas’.)

3. Music.
†a. ‘A small piece of music in slow 4–4 time, with the rhythm of a march, and usually containing two bars, each repeated’ (obs.).
b. ‘The opening piece (after the overture) of an opera or ballet’ (Grove Dict. Mus. s.v.). Also, a number or divertissement in a ballet or ballet-opera.
1724Short Explic. For. Wds. in Musick Bks. 29 Entree, or Entre, is a particular Kind of Air so called. 1776J. Hawkins Hist. Sci. & Pract. Mus. IV. ix. 239 The operas of Lully consist of recitatives, short airs,..choruses in counterpoint, with entrées, and splendid dances. 1949Ballet Ann. III. 92 The choreographers..retain the extremely rigid forms of entrée and build-up of enchaînement, which are found in the old French ballets.
4. Phr. entrée en matière [Fr., lit. = entry into the matter], the beginning (of discourse, etc.), the broaching of a subject.
