Chateaubriand|ʃætəʊbriːɑ̃ː| The name of François René, Vicomte de Chateaubriand (1768–1848), French writer and statesman, used attrib. or absol. of a thick fillet beef steak, grilled and garnished with herbs, etc. So à la Chateaubriand.
