Forms: (Chiefly in plural Middle English, 1500s cheterling, Middle English chytyrlynge, chiterlynge, 1500s chyterlyng, chetterlyng, chytterlyng, chiterling, 1600s chiter-, 1600s–1800s chitterlin, 1500s– chitterling.
Etymology: Found also in the dialect forms chidling, chitling, chitter, chitteril; the primary form and derivation are doubtful. The German kutteln chawdrons, Middle High German kutel, agrees in sense, but has only a remote relation phonetically, coming nearest to the form chidling.

a. The smaller intestines of beasts, as of the pig, esp. as an article of food prepared by frying or boiling. Sometimes filled with mince-meat or force-meat, as a kind of sausage.
