Origin: A borrowing from French. Etymon: French ganache.
Etymology: < French ganache person of low intelligence (1740), chocolate sweet, truffle (1864 or earlier), specific sense developments (see below) of ganache jaw (1642 denoting the lower jaw of a horse, a1661 denoting a human jaw) < Italian ganascia animal's jaw, human jaw (13th cent.) < post-classical Latin ganathos (10th cent. in a glossarial source) < ancient Greek γνάθος jaw (see gnatho- comb. form).With the semantic development in French from ‘jaw’ to ‘person of low intelligence’, compare the expressions (cheval) chargé de ganaches ‘(horse) with a heavy jaw’, (homme) chargé de ganaches ‘(person) with a heavy spirit’ (both 1690). Compare the following earlier example of ganache in an English context denoting the lower jaw of a horse:1696 W. Hope tr. J. de Solleysel Parfait Mareschal i. i. 2 Behind the eyes and towards the Throat, is the ganache (as they called it in French) or that part of the Nether Jaw-bone, which..toucheth the neck next to that part of it, which is called the Onset of the Head. Ganache was first used in French as the name of a kind of bonbon or truffle made of cream and chocolate (compare quot. 1922 at sense 2) by Paris confectioners Maison Siraudin, after Les Ganaches, the name of a popular comic play by Victorien Sardou first performed in Paris in October 1862.
