Origin: A borrowing from Japanese. Etymon: Japanese nattō.
Etymology: < Japanese nattō (11th cent.; 1603 as nattô in Vocabulario da Lingoa de Iapam) < na(t)- to keep in store, to supply (perhaps here representing nassho temple office < na(t)- + -sho place) + -tō bean; all elements < Middle Chinese.The form nattou reflects Japanese kana orthography, in which the syllable is represented by the symbols for to + u.
A Japanese dish of steamed, fermented soybeans, with a sticky texture and strong flavour.The soaked and steamed soybeans are wrapped in rice straw and inoculated with Bacillus natto. Rich in protein, natto was first developed in Buddhist temples as part of a vegetarian diet.
