Iukola

Iukola

 

a fish dried in the sun and wind. It was prepared by the inhabitants of Siberia and the Far East, such as the Nentsi, Selkups, and Kodaks, and served as winter food for themselves and their sledge dogs (it is still used to feed dogs). To make iukola, the fish, mainly varieties of salmon, is scaled, the head is cut off, the body is cut in half lengthwise, and the internal organs are removed along with the bones; the fish is then spread apart and hung on racks. Some peoples used to smoke the fish over a fire or pickle it slightly.
