The wine is prepared by fermenting a must with a high sugar content (30–60 percent); the must is obtained from sun-cured grapes and is treated with the microscopic mold Botrytis cinérea. After clarification the wine is aged from four to eight years in cellars at a temperature of 9°-ll°C and a humidity of 85–90 percent. Under these conditions the presence of the mold Cladosporium cellaroe is necessary. The best-known Tokay wines are Aszu, Tokaji Eszencia, and Szamorodni. In the USSR, Tokay wines are mainly produced on the southern coast of the Crimea and in the Uzbek SSR. During preparation, alcohol is added to the must. Tokay(Gekko gecko), a lizard of the family Gekkonidae. The body measures as much as 36 cm in length. The upper parts have round brick-red and white spots on a gray or bluish background. The tokay is found in South and Southeast Asia, on the Malay Archipelago. It utters a rather loud cry that resembles the sounds “to-kee, ” “to-kay, ” or “tak-keheh, ” ending in a low-pitched sound similar to gurgling or cackling.
