Genus Acetobacter; Gram-negative oval or rod-shaped bacteria. However, the major source is the action of a group of bacteria known as acetobacter which require oxygen from the air for their growth and survival, and cause a reaction between the alcohol of the wine and the oxygen to produce acetic acid. Origin Modern Latin (genus name), from aceto- + bacterium.
