Etymology: < French normande, feminine of normand Norman adj., in sole normande (1843 or earlier; also sole à la normande; Larousse Gastronomique (1988) at cited word attributes the dish to a Parisian chef called Langlais at the beginning of the 19th cent.), sauce normande (1872 or earlier), etc.
Cookery.
As postmodifier. Of a dish: prepared in the traditional Normandy style, with a buttery or creamy sauce.
