Origin: A borrowing from Japanese. Etymon: Japanese wagyū.
Etymology: < Japanese wagyū < Japanese wa- Japan, Japanese ( < Middle Chinese, as the name of a kingdom in south-western Japan (1st century)) + gyū cow, bull, cattle; beef (1603 as guiŭ in Vocabulario da Lingoa de Iapam, in compounds).
A breed of cattle of Japanese origin, from which is obtained tender marbled beef typically containing a high percentage of unsaturated fat; an animal of this type. Also: the beef obtained from such cattle. Frequently attributive.
