1896 J. T. Law Grocer's Man. 811/1 The peculiarity and distinctive mark of Lancashire, as distinct from Cheshire and Cheddar, is that it is a softer cheese, a good toaster, mellower, and very palatable when ripe.

1910 Encycl. Brit. VII. 749/2 Lancashire cheese, when well made and ripe, is loose in texture and is mellow; it has a piquant flavour. As a rule it ripens early and does not keep long.

1937 ‘G. Orwell’ Road to Wigan Pier i. i. 15 For supper there was the pale flabby Lancashire cheese and biscuits.

1955 J. G. Davis Dict. Dairying (ed. 2) 195 Lancashire cheese. Although not well known outside the county of its origin, it is in great demand in Lancashire, especially in the industrial areas of the south, and is reckoned an excellent cheese for toasting.
